  • Japanese toast with barley grass and chive and ricotta cream

    Japanese toast complemented by the green freshness of barley grass. Crisp on the outside, fluffy on the inside, it is served with an intense chive and ricotta cream and microgreens – a harmonious interplay of green on green.

  • Purple bao buns with curry mayonnaise

    Black carrot juice gives these bao buns their unusual colour and delicate flavour. The intense, delicately purple curry mayonnaise adds flavour and accents of colour, while the aromatic Asian filling made from red cabbage, tofu and purple carrot rounds off the colour palette perfectly.

  • Blueberry and violet curd with crumble and meringue

    Delicate violets and fine blueberries lend shades of purple to this deconstructed lemon meringue tart, transforming a classic recipe into an elegant interplay of colours, shapes and flavours.
